Description

These Freezer Breakfast Burritos are a delicious and practical solution for busy mornings, packed with protein and nutrients.


Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, crack the eggs and add the milk, salt, and pepper. Whisk until combined.
  2. Heat a non-stick skillet over medium heat and add the vegetable oil. Once hot, pour in the egg mixture and cook for about 5-7 minutes until fully cooked.
  3. Warm the tortillas by microwaving for 30 seconds or placing in a skillet until pliable.
  4. Grab a tortilla and place about 1/4 cup scrambled eggs, 2 tablespoons of crumbled sausage, and a sprinkle of both cheeses in the center.
  5. Fold the tortilla sides over the filling, then roll from the bottom up to create a tight burrito.
  6. Wrap each burrito in plastic wrap, then cover with aluminum foil.
  7. Place the wrapped burritos in a freezer-safe bag or container and label the contents.

Notes
