- 12 large eggs
- 1/2 cup milk
- 1 pound breakfast sausage, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 12 (10-inch) flour tortillas
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- In a large mixing bowl, crack the eggs and add the milk, salt, and pepper. Whisk until combined.
- Heat a non-stick skillet over medium heat and add the vegetable oil. Once hot, pour in the egg mixture and cook for about 5-7 minutes until fully cooked.
- Warm the tortillas by microwaving for 30 seconds or placing in a skillet until pliable.
- Grab a tortilla and place about 1/4 cup scrambled eggs, 2 tablespoons of crumbled sausage, and a sprinkle of both cheeses in the center.
- Fold the tortilla sides over the filling, then roll from the bottom up to create a tight burrito.
- Wrap each burrito in plastic wrap, then cover with aluminum foil.
- Place the wrapped burritos in a freezer-safe bag or container and label the contents.
Notes
