Instructions
- Mix Dry Ingredients: Whisk together the flour, sugar, baking powder, and salt in a large mixing bowl.
- Mix Wet Ingredients: In another bowl, combine the milk, egg, and melted butter until smooth.
- Combine Mixtures: Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Make the Cinnamon Swirl: Mix the brown sugar and ground cinnamon in a small bowl.
- Prepare the Skillet: Heat a non-stick skillet over medium heat and lightly grease it.
- Cook the Pancakes: Pour about 1/4 cup of batter on the skillet and drizzle the cinnamon swirl mixture on top. Swirl gently into the batter.
- Flip the Pancakes: Cook until small bubbles form, then flip and cook until golden brown, about 2-3 minutes each side.
- Make the Glaze: Mix cream cheese, powdered sugar, and vanilla extract until smooth.
- Serve: Stack pancakes on plates, drizzle with cream cheese glaze, and garnish as desired.
Notes
Don’t overmix the batter for fluffy pancakes. Store leftovers in an airtight container in the refrigerator for 3-4 days.
