Ingredients

  • 1 whole head of roasted garlic
  • 1 cup Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 cup feta cheese
  • Fresh herbs (for topping)
  • Veggies (for serving)
  • Crackers (for serving)

Instructions

  1. Roast the garlic until soft. Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-40 minutes.
  2. Combine roasted garlic, Greek yogurt, lemon juice, and feta cheese in a mixing bowl. Squeeze the roasted garlic into the bowl.
  3. Blend until creamy and smooth. Use an immersion or regular blender until the mixture is free of lumps.
  4. Taste and adjust the seasoning if necessary. Add more lemon juice, salt, or pepper if desired.
  5. Top the dip with fresh herbs before serving. Use parsley, dill, or thyme for additional flavor.
  6. Serve with an arrangement of colorful veggies and crackers around the dip for dipping.
