Description
A delicious baked banana French toast casserole that combines ripe bananas and fluffy bread, perfect for lazy weekends or special occasions.
Ingredients

- 1 loaf of bread (such as challah or brioche)
- 4 ripe bananas, sliced
- 6 large eggs
- 2 cups milk
- 1/2 cup heavy cream
- 1/2 cup brown sugar
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- A pinch of salt
- Butter for greasing
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
- Tear the loaf of bread into large chunks and layer half in the baking dish.
- Add half of the sliced bananas on top of the bread.
- Layer the remaining bread on top of the bananas, followed by the rest of the banana slices.
- In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, and a pinch of salt until smooth.
- Pour the custard mixture over the bread and bananas, pressing down on the bread to soak it in.
- Cover with plastic wrap and refrigerate overnight.
- The next morning, remove the cover and bake for 45-50 minutes until puffed and golden brown.
- Let cool for a few minutes before serving.
Notes
Serve warm with maple syrup, fresh fruits, or whipped cream. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
