Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large bowl the cooked rice, shredded chicken, cream of chicken soup, and chicken broth.
  3. Add the shredded cheese and frozen mixed vegetables.
  4. Season with garlic powder, onion powder, salt, and pepper.
  5. Pour the mixture into a greased baking dish.
  6. Sprinkle breadcrumbs on top if desired.
  7. Bake for 30-35 minutes until bubbly and golden brown.
  8. Cool for a few minutes before serving.

Notes

Use leftover chicken and veggies to make this casserole even easier. Customize the cheese and vegetables to your liking.
