- 4 Salmon fillets
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 cloves Garlic, minced
- 1 tsp Salt
- 1 tsp Black pepper
- 4 cups Mixed salad greens
- 2 cups Cooked rice
- 1 cup Feta cheese, crumbled
- 1/2 cup Yogurt
- Fresh herbs (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together olive oil, lemon juice, minced garlic, salt, and black pepper in a bowl.
- Coat the salmon fillets with the olive oil mixture and place on a baking sheet lined with parchment paper.
- Bake the salmon for 15-20 minutes until it flakes easily with a fork.
- Combine mixed salad greens, cooked rice, and crumbled feta cheese in another mixing bowl.
- Serve the cooked salmon on top of the salad mixture, drizzling with yogurt.
- Garnish with fresh herbs if desired.
Notes
For extra flavor, marinate the salmon for about 30 minutes before baking. Serve warm with a squeeze of fresh lemon juice.
