Description

A refreshing twist on the classic key lime pie, these bars combine zesty key lime juice with a buttery graham cracker crust, perfect for summer gatherings.


Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tablespoons salted butter (melted)
  • 0.33 cup granulated sugar
  • 1 can sweetened condensed milk (14-ounce)
  • 5 large egg yolks
  • 0.5 cup fresh key lime juice
  • 2 tablespoons key lime zest
  • Powdered sugar (for dusting, optional)
  • 2 tablespoons key lime and/or lemon zest (for topping, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray an 8 or 9-inch square baking pan with cooking spray and line it with parchment paper.
  2. Combine the graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture into the bottom of the prepared pan. Bake for about 7 minutes, until the crust is lightly golden. Let it cool completely.
  3. Reduce the oven temperature to 350°F (175°C). In a medium bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and key lime zest. Mix until blended.
  4. Pour the filling over the cooled crust.
  5. Bake for about 25 minutes, until the filling is set. Let it cool at room temperature.
  6. Refrigerate for 2-3 hours or overnight to firm up nicely.
  7. Serve by lifting the bars out of the pan with the parchment paper. Dust with powdered sugar and extra zest, slice, and enjoy!

Notes

These bars are best served chilled. Garnish with whipped cream and lime zest for added presentation.
