Ingredients

  • 1 block Halloumi cheese
  • 2 tablespoons Spicy honey
  • 2 Sweet potatoes, cubed
  • 1 Avocado, sliced
  • 1 cup Quinoa
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the grill or a grill pan.
  2. Cut the sweet potatoes into cubes, toss with olive oil, salt, and pepper, and roast until tender.
  3. Cook quinoa according to package instructions.
  4. Grill the halloumi slices until golden brown on both sides.
  5. Drizzle grilled halloumi with spicy honey.
  6. In a bowl, layer roasted sweet potatoes, cooked quinoa, sliced avocado, and grilled halloumi.
  7. Drizzle more hot honey on top if desired and serve.
