Description

A nutritious and tasty alternative to traditional desserts, this Healthy Carrot Cake is made with fresh carrots, Greek yogurt, and sweetened naturally with maple syrup.


Ingredients

  • 2 cups grated carrots
  • 3 large eggs
  • ½ cup maple syrup
  • ½ cup coconut oil (melted)
  • ½ cup plain Greek yogurt
  • 2 cups oat flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon sea salt
  • 8 oz Neufchatel cheese (softened)
  • ¼ cup Greek yogurt
  • ¼ cup maple syrup
  • Pinch sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper for easy removal later.
  2. Mix the grated carrots with eggs, maple syrup, melted coconut oil, Greek yogurt, and vanilla extract in a large mixing bowl. Stir well until everything is well mixed.
  3. Prepare the dry ingredients in a separate bowl by mixing the oat flour, baking powder, baking soda, ground cinnamon, ground ginger, ground nutmeg, and sea salt.
  4. Combine the dry ingredients with the wet ingredients. Stir gently until just combined; do not overmix.
  5. Bake the batter in the prepared pan for 20 to 25 minutes. Check for doneness with a toothpick.
  6. Cool the cake completely in the pan to help it firm up for frosting.
  7. Prepare the frosting by mixing the softened Neufchatel cheese, Greek yogurt, maple syrup, and a pinch of sea salt until smooth and creamy.
  8. Frost the cooled cake with the cream cheese frosting evenly over the top.
