Ingredients

  • 2 cups Greek yogurt (plain, thick)
  • 0.25 cup peanut butter (natural)
  • 0.25 cup dark chocolate (melted)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Combine Greek yogurt with honey or maple syrup and vanilla extract in a mixing bowl until well incorporated.
  2. Line a baking sheet with parchment paper and spread the yogurt mixture evenly to form a layer about 1/2 inch thick.
  3. Melt the peanut butter in a microwave-safe bowl until smooth, then drizzle over the yogurt layer.
  4. Melt the dark chocolate and drizzle it on top as well.
  5. Swirl the peanut butter and chocolate into the yogurt gently, being careful not to mix completely.
  6. Place the baking sheet in the freezer and let it sit until firm, about 120-180 minutes.
  7. Break the frozen bark into pieces and store in an airtight container in the freezer.

Notes

For a delightful breakfast option, crumble pieces over oatmeal or granola. To keep fresh, use wax paper between layers in storage.
