- 4 pieces Bone-in Chicken Thighs
- 1/4 cup Extra-Virgin Olive Oil
- 1/4 cup Lemon Juice
- 4 cloves Minced Garlic
- 1 tablespoon Dried Oregano
- 1 teaspoon Dried Thyme
- 1 tablespoon Dijon Mustard
- 1 teaspoon Kosher Salt
- 1 teaspoon Freshly Ground Black Pepper
Instructions
- Prepare the Marinade: In a bowl, mix together the extra-virgin olive oil, lemon juice, minced garlic, dried oregano, dried thyme, Dijon mustard, salt, and black pepper. Whisk until well combined.
- Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably 3 to 6 hours.
- Preheat the Grill or Oven: If grilling, preheat to medium-high heat. If roasting, preheat the oven to 425°F (220°C).
- Cook the Chicken: For grilling, remove the chicken from the marinade and let excess liquid drip off. Grill skin side down for about 6-7 minutes, then flip and grill for another 8-10 minutes. For roasting, place in a baking dish, skin side up, and roast for about 30-35 minutes.
- Rest Before Serving: Once cooked, allow the chicken to rest for 5-10 minutes.
- Serve: Enjoy hot, garnished with fresh parsley or lemon wedges if desired.
Notes
Use fresh lemons for the best flavor. Marinating overnight gives the best results.
