Description

Moist and fluffy double chocolate cupcakes, perfect for any occasion and chocolate lovers.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/3 cup coffee
  • 1 cup unsalted butter (for frosting)
  • 3.54.5 cups powdered sugar
  • 3/4 cup cocoa powder (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 34 tablespoons whipping cream (or milk, for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. Mix the vegetable oil and sugar until combined. Add the egg, vanilla extract, and buttermilk, then mix until blended.
  4. Stir in the coffee.
  5. Gradually mix in the dry ingredients until just combined.
  6. Fill the cupcake liners about 2/3 full with the batter.
  7. Bake in the preheated oven for 18-20 minutes.
  8. Let the cupcakes cool in the pan for about 10 minutes, then transfer to a wire rack.
  9. Beat the softened butter until fluffy. Gradually add sifted powdered sugar and cocoa powder.
  10. Frost the cooled cupcakes with homemade chocolate frosting.

Notes

Serve with a scoop of vanilla ice cream and dust with cocoa or powdered sugar for an elegant finish.
