- ½ pound fusilli pasta
- 2 tablespoons olive oil, divided
- 1 boneless, skinless chicken breast
- Salt and black pepper, to taste
- 1 teaspoon minced garlic
- 1 cup broccoli florets
- ½ cup diced zucchini
- ¼ cup asparagus tips
- ¼ cup diced green bell pepper
- 8 cherry or grape tomatoes, halved
- 1 tablespoon Italian seasoning
- ¼ cup heavy cream
- 1 tablespoon grated Parmesan cheese (for topping)
Instructions
- Cook the pasta by bringing a large pot of salted water to a boil. Add the fusilli pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- Prepare the chicken by slicing the boneless, skinless chicken breast into thin strips and seasoning with salt and black pepper.
- Cook the chicken in a skillet with 1 tablespoon of olive oil over medium heat for about 4-5 minutes until golden brown and cooked through. Transfer to a plate and set aside.
- Sauté the vegetables in the same skillet, adding the remaining tablespoon of olive oil. Stir in the minced garlic and cook for about 30 seconds. Add broccoli florets, zucchini, asparagus tips, and green bell pepper, sautéing for 3-4 minutes until tender-crisp.
- Build the sauce by adding halved cherry tomatoes and Italian seasoning. Pour in heavy cream and stir gently. Simmer for about 2 minutes until slightly thickened.
- Combine everything by returning the cooked chicken to the skillet and adding the drained pasta. Toss to coat with the creamy sauce, heating for another 1-2 minutes if needed.
- Serve the pasta primavera on warm plates, topping with grated Parmesan cheese. Enjoy hot!
