Ingredients

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil over medium heat in a large skillet. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes.
  2. Add the diced onion and minced garlic to the skillet, and sauté until the onion is translucent, approximately 2-3 minutes.
  3. Stir in the orzo and chicken broth. Bring to a boil, then reduce heat and simmer until the orzo is tender, about 10-12 minutes, stirring occasionally.
  4. Once the orzo is cooked, stir in the heavy cream and fresh spinach. Cook for an additional 2-3 minutes, or until the spinach is wilted and the sauce is creamy.
  5. Serve hot, topped with grated Parmesan cheese for added flavor.

Notes

For extra flavor, try adding thyme or basil while cooking. You can substitute chicken breast with thighs for a juicier texture.
