- 1 pound chicken breast, diced
- 1 cup orzo pasta
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup chicken broth
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat olive oil over medium heat in a large skillet. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 6-8 minutes.
- Add the diced onion and minced garlic to the skillet, and sauté until the onion is translucent, approximately 2-3 minutes.
- Stir in the orzo and chicken broth. Bring to a boil, then reduce heat and simmer until the orzo is tender, about 10-12 minutes, stirring occasionally.
- Once the orzo is cooked, stir in the heavy cream and fresh spinach. Cook for an additional 2-3 minutes, or until the spinach is wilted and the sauce is creamy.
- Serve hot, topped with grated Parmesan cheese for added flavor.
Notes
For extra flavor, try adding thyme or basil while cooking. You can substitute chicken breast with thighs for a juicier texture.
