- 1/2 cup granulated sugar
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 4 cups fresh strawberries, sliced
- 1/4 cup powdered sugar
- Whipped cream for topping
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together 2 cups of all-purpose flour, 1/2 cup of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt in a large bowl.
- Cut in 1/2 cup of cold, cubed unsalted butter until the mixture resembles coarse crumbs.
- Add 1 cup of heavy cream and 1 teaspoon of vanilla extract; stir gently until just combined.
- Turn out the dough onto a floured surface and knead a few times until it comes together.
- Roll out to about 1-inch thickness and cut out circles using a round cutter.
- Bake in the oven for 15-20 minutes until golden brown.
- Cool on a wire rack.
- Prepare the strawberries by mixing 4 cups of sliced strawberries with 1/4 cup of powdered sugar; let sit for 10 minutes.
- Assemble by slicing each shortcake in half, layering with strawberries and whipped cream, then replace the top.
Notes
Serve immediately for the best taste. Consider adding a sprig of mint for garnish.
