Description

Classic Lemon Bars combine a buttery, crumbly crust with a tangy and sweet lemon filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for filling)
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/2 cup freshly squeezed lemon juice
  • 1/4 teaspoon baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the crust by creaming butter and 1/2 cup sugar until light and fluffy. Gradually mix in flour and salt.
  3. Press the dough firmly into the bottom of a greased 9×13 inch baking pan.
  4. Bake the crust for about 20 minutes until light golden brown.
  5. Prepare the filling by whisking eggs, 1 cup sugar, lemon zest, lemon juice, and baking powder until smooth.
  6. Combine the filling with the baked crust and return to the oven, baking for an additional 20-25 minutes until the edges are set.
  7. Cool on a wire rack, then sprinkle with powdered sugar before cutting into squares.

Notes

Serve fresh and dust with powdered sugar. Store in the fridge for up to 3-4 days or freeze for longer storage.
