- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup granulated sugar (for filling)
- 3 large eggs
- 1 tablespoon lemon zest
- 1/2 cup freshly squeezed lemon juice
- 1/4 teaspoon baking powder
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Make the crust by creaming butter and 1/2 cup sugar until light and fluffy. Gradually mix in flour and salt.
- Press the dough firmly into the bottom of a greased 9×13 inch baking pan.
- Bake the crust for about 20 minutes until light golden brown.
- Prepare the filling by whisking eggs, 1 cup sugar, lemon zest, lemon juice, and baking powder until smooth.
- Combine the filling with the baked crust and return to the oven, baking for an additional 20-25 minutes until the edges are set.
- Cool on a wire rack, then sprinkle with powdered sugar before cutting into squares.
Notes
Serve fresh and dust with powdered sugar. Store in the fridge for up to 3-4 days or freeze for longer storage.
