Description

A delicious and nutritious banana bread loaded with protein and dark chocolate chips, perfect for breakfast or a snack.


Ingredients

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9 x 5 inch loaf pan and line the bottom with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add the eggs, maple syrup (or honey), melted coconut oil, and vanilla extract to the mashed bananas, and whisk until smooth.
  5. Combine the whole wheat flour, protein powder, baking soda, baking powder, ground cinnamon, and sea salt in a separate bowl.
  6. Gradually mix the dry ingredients into the wet banana mixture until just combined.
  7. Fold in the dark chocolate chips and walnuts or pecans.
  8. Pour the batter into the prepared loaf pan; sprinkle more chocolate chips on top if desired.
  9. Bake for 50 to 55 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for the best flavor and sweetness. Don’t overmix the batter.
