Description

Deliciously light and fluffy vanilla cupcakes topped with rich buttercream frosting, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup unsweetened cocoa powder (for buttercream)
  • 1/2 cup butter, softened (for buttercream)
  • 34 cups powdered sugar (for buttercream)
  • 2 teaspoons vanilla extract (for buttercream)
  • Milk as needed (for buttercream)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. Cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, beating well after each addition, then stir in the milk and vanilla extract until combined.
  4. Mix the flour, baking powder, and salt together in a separate bowl.
  5. Combine the dry mixture with the wet ingredients gradually, stirring gently until just combined.
  6. Fill each cupcake liner about 2/3 full with batter.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Cool the cupcakes in the tin for 5 minutes before transferring to a wire rack.
  9. Make the buttercream by beating together softened butter and cocoa powder, then gradually add powdered sugar and enough milk for desired consistency, finishing with vanilla extract.
  10. Frost the cooled cupcakes and serve.

Notes

Use room temperature ingredients for a better texture; do not overmix the batter to prevent dense cupcakes.
