Description
A comforting and easy slow-cooker chicken stroganoff made with tender chicken, mushrooms, onions, and a creamy sauce. Perfect for a cozy weeknight dinner.
Ingredients
1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
1 medium onion, diced
2 cups sliced mushrooms
2 cloves garlic, minced
1 cup chicken broth
1 tbsp Worcestershire sauce
1 tsp paprika
Salt and pepper, to taste
1/2 cup sour cream
2 tbsp all-purpose flour
2 tbsp fresh parsley, chopped (optional)
Cooked egg noodles or rice for serving
Instructions
1. Place chicken, onion, mushrooms, garlic, chicken broth, Worcestershire sauce, paprika, salt, and pepper in the slow cooker. Stir to combine.
2. Cover and cook on low for 5–6 hours or on high for 2–3 hours, until chicken is cooked through and vegetables are tender.
3. In a small bowl, mix sour cream and flour until smooth. Stir into slow cooker and cook on high for an additional 15–20 minutes until sauce thickens.
4. Serve over cooked egg noodles or rice and garnish with chopped parsley if desired.
Notes
For extra flavor, sauté mushrooms and onions before adding to the slow cooker.
Adjust seasonings to taste.
Can be made ahead and stored in the refrigerator for up to 3 days.
