Ingredients
4 cups vegetable or chicken broth
1 cup pumpkin puree
2 tbsp miso paste
2 tsp soy sauce
1 tsp sesame oil
2 cloves garlic, minced
1-inch piece ginger, grated
2 servings ramen noodles
Toppings: soft-boiled egg, sliced scallions, roasted pumpkin seeds, nori, chili oil (optional)
Instructions
1. In a pot, heat sesame oil over medium heat. Sauté garlic and ginger until fragrant.
2. Add pumpkin puree, miso paste, soy sauce, and broth. Stir to combine and bring to a simmer.
3. Cook for 5–7 minutes until the broth is slightly thickened and heated through.
4. Cook ramen noodles separately according to package instructions and drain.
5. Divide noodles into bowls and pour pumpkin miso broth over the top.
6. Add desired toppings such as soft-boiled egg, scallions, pumpkin seeds, nori, and chili oil.
7. Serve hot and enjoy.
Notes
Use fresh pumpkin puree for best flavor.
Adjust miso and soy sauce to taste.
