- ½ cup buttermilk
- ½ cup hot coffee or hot water
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup granulated sugar
- ½ cup packed light brown sugar
- ¾ cup semisweet chocolate chips or chunks (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Mix the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl until well combined.
- Whisk the vegetable oil, buttermilk, hot coffee (or hot water), eggs, vanilla extract, granulated sugar, and brown sugar in another bowl until smooth.
- Combine the wet mixture with the dry ingredients, stirring gently until just mixed.
- Fold in the chocolate chips until evenly distributed.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for about 5 minutes before transferring to a wire rack.
