Description

Ingredients

  • ½ cup buttermilk
  • ½ cup hot coffee or hot water
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup semisweet chocolate chips or chunks (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Mix the flour, cocoa powder, baking soda, baking powder, and salt in a large bowl until well combined.
  3. Whisk the vegetable oil, buttermilk, hot coffee (or hot water), eggs, vanilla extract, granulated sugar, and brown sugar in another bowl until smooth.
  4. Combine the wet mixture with the dry ingredients, stirring gently until just mixed.
  5. Fold in the chocolate chips until evenly distributed.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for about 5 minutes before transferring to a wire rack.

Notes
