A flavorful comfort bowl with tender chicken, Mexican-style street corn, and seasoned rice – bringing bold flavors from Mexico right to your kitchen.
Ingredients
1 cup long-grain rice
2 cups chicken broth
1 lb boneless, skinless chicken breast, diced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp smoked paprika
Salt and pepper, to taste
1 cup corn kernels (fresh or frozen)
1/4 cup mayonnaise
1/4 cup cotija cheese, crumbled
1 tbsp lime juice
1/4 tsp chili powder for corn topping
Optional: chopped cilantro for garnish
Instructions
1. Cook rice in chicken broth according to package instructions; set aside.
2. Season diced chicken with chili powder, smoked paprika, salt, and pepper.
3. Heat olive oil in a skillet over medium heat and cook chicken until fully cooked, about 5–7 minutes.
4. In a small bowl, mix corn with mayonnaise, cotija cheese, lime juice, and chili powder.
5. Assemble bowls: start with a base of cooked rice, top with cooked chicken, and spoon over the street corn mixture.
6. Garnish with chopped cilantro if desired.
7. Serve immediately.
Notes
For extra flavor, grill the corn instead of sautéing.
Add black beans or diced avocado for more texture and nutrients.
Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat before serving.
