- 2 cups strawberries, fresh or frozen
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine strawberries and chopped rhubarb in a large bowl; add sugar and cornstarch.
- Pour the fruit mixture into a baking dish, spreading it out evenly.
- Mix together flour, oats, brown sugar, melted butter, cinnamon, and salt in another bowl.
- Sprinkle the crumble mixture over the fruit layer.
- Bake for 30-35 minutes until topping is golden brown and fruit is bubbly.
- Cool for a few minutes before serving warm, preferably with ice cream or yogurt.
Notes
Best served warm. Can be topped with vanilla ice cream or whipped cream for extra creaminess.
