Description

A delightful dessert combining sweet strawberries and tart rhubarb, topped with a crispy crumble.


Ingredients

  • 2 cups strawberries, fresh or frozen
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine strawberries and chopped rhubarb in a large bowl; add sugar and cornstarch.
  3. Pour the fruit mixture into a baking dish, spreading it out evenly.
  4. Mix together flour, oats, brown sugar, melted butter, cinnamon, and salt in another bowl.
  5. Sprinkle the crumble mixture over the fruit layer.
  6. Bake for 30-35 minutes until topping is golden brown and fruit is bubbly.
  7. Cool for a few minutes before serving warm, preferably with ice cream or yogurt.

Notes

Best served warm. Can be topped with vanilla ice cream or whipped cream for extra creaminess.
