- 1 box strawberry cake mix, plus ingredients listed on the box (eggs, oil, and water)
- 1½ cups fresh or frozen strawberries (chopped)
- 1 cup white chocolate chips or chunks
- 1 cup sweetened shredded coconut
- ½ cup chopped pecans or walnuts (optional)
- 8 oz cream cheese (softened)
- ½ cup (1 stick) unsalted butter (softened)
- 2½ cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking pan.
- Layer the bottom of the pan with coconut, chopped strawberries, and the optional nuts.
- Prepare the cake batter according to the cake mix instructions.
- Pour the prepared cake batter over the layered ingredients.
- Beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar and vanilla to the cream cheese mixture.
- Dollop and swirl the cream cheese mixture over the cake batter.
- Sprinkle the white chocolate chips on top.
- Bake for 40 to 45 minutes, performing the toothpick test.
- Let the cake cool for about 30 minutes before serving.
