Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl until fully coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Beat the softened cream cheese in a large bowl until smooth.
  5. Add 1 cup of sugar and 1 teaspoon of vanilla extract, mixing until well combined.
  6. Add 2 eggs, one at a time, mixing well after each addition.
  7. Pour the filling over the crust and spread it evenly.
  8. Bake for 55-60 minutes until the center is set but jiggles slightly.
  9. Cool at room temperature for about 1 hour.
  10. Mix the hulled strawberries with 1/4 cup sugar and 1 tablespoon of lemon juice; let sit for 10 minutes.
  11. Pour the strawberry mixture over the cooled cheesecake.
  12. Chill in the refrigerator for at least 4 hours before serving.

Use room temperature ingredients for the best results and consider baking in a water bath for a creamier texture.
