- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl until fully coated.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese in a large bowl until smooth.
- Add 1 cup of sugar and 1 teaspoon of vanilla extract, mixing until well combined.
- Add 2 eggs, one at a time, mixing well after each addition.
- Pour the filling over the crust and spread it evenly.
- Bake for 55-60 minutes until the center is set but jiggles slightly.
- Cool at room temperature for about 1 hour.
- Mix the hulled strawberries with 1/4 cup sugar and 1 tablespoon of lemon juice; let sit for 10 minutes.
- Pour the strawberry mixture over the cooled cheesecake.
- Chill in the refrigerator for at least 4 hours before serving.

Use room temperature ingredients for the best results and consider baking in a water bath for a creamier texture.
