Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 package cream cheese (8 oz), softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine chopped strawberries, sugar, cornstarch, and lemon juice in a medium bowl. Mix gently until well combined.
  3. Mix softened cream cheese, powdered sugar, and vanilla extract in another bowl until smooth and creamy. This will be your cheesecake filling.
  4. Roll out thawed puff pastry on a lightly floured surface and cut it into 4×4 inch squares, resulting in about 8 squares.
  5. Place about a tablespoon of the cream cheese mixture in the center of each square, then add a tablespoon of the strawberry mixture on top of the cream cheese.
  6. Bring two opposite corners of the pastry square together to form a triangle. Seal the edges well to prevent any filling from leaking out. Use a fork to crimp the edges for a nice finish.
  7. Brush the tops of the turnovers with the beaten egg to give them a shiny finish when baked.
  8. Place the turnovers on a parchment-lined baking sheet and bake for 20-25 minutes, or until they are golden brown and flaky.
  9. Let them cool for a few minutes on the baking sheet, then dust with powdered sugar before serving.

Serve warm or at room temperature. Pairs well with vanilla ice cream or whipped cream.
