- 1 cup fresh strawberries, chopped
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 package cream cheese (8 oz), softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package puff pastry (2 sheets), thawed
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine chopped strawberries, sugar, cornstarch, and lemon juice in a medium bowl. Mix gently until well combined.
- Mix softened cream cheese, powdered sugar, and vanilla extract in another bowl until smooth and creamy. This will be your cheesecake filling.
- Roll out thawed puff pastry on a lightly floured surface and cut it into 4×4 inch squares, resulting in about 8 squares.
- Place about a tablespoon of the cream cheese mixture in the center of each square, then add a tablespoon of the strawberry mixture on top of the cream cheese.
- Bring two opposite corners of the pastry square together to form a triangle. Seal the edges well to prevent any filling from leaking out. Use a fork to crimp the edges for a nice finish.
- Brush the tops of the turnovers with the beaten egg to give them a shiny finish when baked.
- Place the turnovers on a parchment-lined baking sheet and bake for 20-25 minutes, or until they are golden brown and flaky.
- Let them cool for a few minutes on the baking sheet, then dust with powdered sugar before serving.
