- 1 ½ cups graham cracker crumbs
- 6 tablespoons melted butter
- ¼ cup granulated sugar
- 16 oz full-fat cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups fresh strawberries, sliced
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (163°C).
- Line an 8×8-inch pan with parchment paper to prevent sticking.
- Combine the graham cracker crumbs, melted butter, and ¼ cup granulated sugar in a medium bowl.
- Press the crumb mixture into the bottom of the pan as evenly as possible.
- Bake for 8-10 minutes to set the crust, then let cool.
- Beat the softened cream cheese until smooth in a large mixing bowl.
- Gradually add ½ cup granulated sugar, eggs, and vanilla, mixing until smooth.
- Pour the cheesecake mixture over the cooled crust, spreading evenly.
- Toss sliced strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of lemon juice in a separate bowl.
- Spread the strawberry mixture over the cheesecake layer.
- Bake for 35-40 minutes, until the cheesecake is set but slightly jiggly in the center.
- Cool completely at room temperature, then refrigerate for at least 4 hours before slicing.
Notes
Use full-fat cream cheese for the best taste and texture. Adjust sugar for a less sweet topping if desired.
