- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 2 tablespoons sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C).
- Combine the crushed graham crackers with 1/2 cup sugar and melted butter in a large mixing bowl.
- Press the graham cracker mixture into the bottom of a 9-inch springform pan.
- Beat the softened cream cheese until smooth and creamy.
- Add 1 cup of sugar and vanilla extract to the cream cheese, mixing until combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until smooth.
- Pour the cream cheese mixture over the crust and spread it evenly.
- Bake for about 1 hour, until the center is set but still slightly jiggly.
- Cool in the oven with the door slightly ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours or overnight.
- Slice the strawberries, toss them with 2 tablespoons of sugar, and let sit for 10 minutes.
- Top the cheesecake with the sweetened strawberries before serving.
Notes
For best results, use fresh strawberries and ensure cream cheese is at room temperature to avoid lumps.
