Description

A comforting and hearty slow cooker chicken stew that warms you up on chilly days.


Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Sear the chicken in a hot skillet until golden brown on all sides.
  2. Transfer the seared chicken to the slow cooker and add the diced carrots, celery, onion, and potatoes.
  3. Add minced garlic and bay leaves to the slow cooker.
  4. Season with dried thyme, salt, and pepper; mix gently.
  5. Pour chicken broth over the ingredients in the slow cooker.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Remove bay leaves and adjust seasoning before serving.
  8. Serve hot, garnished with fresh parsley.

Notes

For a thicker stew, mix flour with cold water and add it to the slow cooker. Can be made with different proteins or vegetables based on preference.
