Description

A delicious and healthy sheet pan meal featuring teriyaki salmon and fresh vegetables, perfect for busy weeknights.


Ingredients

  • 4 salmon fillets (6 oz each, skin-on)
  • 1/4 cup soy sauce (low sodium)
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 cups broccoli florets
  • 2 cups bell peppers (red/yellow), sliced
  • 1 cup carrots, thinly sliced
  • 1 tbsp sesame seeds
  • 2 tbsp green onions, sliced
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Make the teriyaki glaze by whisking together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger in a medium bowl.
  4. Arrange the salmon fillets on one side of the baking sheet and the broccoli, bell peppers, and carrots on the other.
  5. Season the vegetables with olive oil, salt, and pepper.
  6. Glaze the salmon generously with the teriyaki glaze.
  7. Bake for 15-18 minutes until the salmon flakes easily and vegetables are tender yet crisp.
  8. Garnish with sesame seeds and sliced green onions before serving.

Notes

Serve fresh out of the oven or store leftovers in an airtight container in the refrigerator for up to 2-3 days.
