Ingredients

- 4 salmon fillets (6 oz each, skin-on)
- 1/4 cup soy sauce (low sodium)
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 cups broccoli florets
- 2 cups bell peppers (red/yellow), sliced
- 1 cup carrots, thinly sliced
- 1 tbsp sesame seeds
- 2 tbsp green onions, sliced
- Olive oil
- Salt and pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare a baking sheet by lining it with parchment paper.
- Make the teriyaki glaze by whisking together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger in a medium bowl.
- Arrange the salmon fillets on one side of the baking sheet and the broccoli, bell peppers, and carrots on the other.
- Season the vegetables with olive oil, salt, and pepper.
- Glaze the salmon generously with the teriyaki glaze.
- Bake for 15-18 minutes until the salmon flakes easily and vegetables are tender yet crisp.
- Garnish with sesame seeds and sliced green onions before serving.
Notes
Serve fresh out of the oven or store leftovers in an airtight container in the refrigerator for up to 2-3 days.
