Description
A quick and easy fall-inspired sheet pan meal featuring juicy chicken breasts, tender squash, and a sweet and tangy maple-Dijon glaze. Minimal prep and maximum flavor!
Ingredients
4 boneless, skinless chicken breasts
2 cups butternut squash, peeled and cubed
2 tbsp olive oil
2 tbsp pure maple syrup
1 tbsp Dijon mustard
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Optional: fresh thyme for garnish
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, garlic powder, salt, and pepper.
3. Place chicken breasts and squash on the prepared sheet pan.
4. Brush the maple-Dijon glaze over the chicken and toss squash in any remaining glaze.
5. Spread everything in a single layer.
6. Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and squash is tender.
7. Optional: garnish with fresh thyme before serving.
Notes
Use evenly sized squash pieces for consistent cooking.
Can substitute other winter squash or vegetables.
Sheet pan meals can be customized with your favorite seasonings.
