- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 1/4 cup ketchup or tomato paste
- 4 cloves garlic (minced)
- 1 teaspoon dried thyme or Italian seasoning (optional)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon cornstarch
- 1/4 cup fresh parsley or green onions
Instructions
- Prepare the Chicken Thighs: Start by placing the bone-in chicken thighs in your crockpot. Make sure to space them out so they cook evenly.
- Mix the Sauce: In a mixing bowl, whisk together the low-sodium soy sauce, honey, ketchup (or tomato paste), minced garlic, dried thyme (or Italian seasoning), salt, and pepper.
- Coat the Chicken: Drizzle the sauce mixture over the chicken thighs in the crockpot. Make sure each piece is fully coated with the sauce.
- Cook in the Crockpot: Put the lid on the crockpot and cook the chicken on low heat for about 360 minutes.
- Thicken the Sauce: In the last 30 minutes of cooking, mix the tablespoon of cornstarch with a little water to create a slurry. Stir this into the crockpot to thicken the sauce.
- Finish with Fresh Herbs: Once the cooking time is up, sprinkle fresh parsley or green onions over the chicken before serving.
