Description

Delicious raspberry cheesecake bars that combine creamy and fruity flavors, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh raspberries (or frozen, thawed and drained)
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C) and line a 9×13-inch baking pan with parchment paper.
  2. Mix the graham cracker crumbs, melted butter, and ¼ cup sugar together in a medium bowl. Press firmly into the bottom of the prepared pan.
  3. Bake the crust in the oven for 10 minutes, then let it cool completely.
  4. Beat the softened cream cheese with 1 cup of sugar in a large bowl until smooth.
  5. Add the large eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Toss the fresh raspberries with 1 tablespoon of cornstarch in a separate bowl.
  7. Fold the raspberries into the cream cheese mixture with a spatula.
  8. Pour the cheesecake filling over the cooled crust, spreading it evenly.
  9. Bake for 30-35 minutes until the center is set but jiggles slightly.
  10. Cool on a wire rack, then cover and refrigerate for at least 4 hours.
  11. Lift the bars from the pan using the parchment paper overhang, slice into squares, and serve cold.

Notes

Fresh raspberries yield the best flavor. Adjust sweetness as desired.
