Description
Soft, cozy pumpkin s’mores cookies with a perfect blend of pumpkin spice, chocolate, and gooey marshmallows – the ultimate fall treat.
Ingredients
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp pumpkin pie spice
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1/2 cup pumpkin puree
1 tsp vanilla extract
1 cup mini marshmallows
1 cup chocolate chips
Optional: crushed graham crackers for topping
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
3. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
4. Beat in egg, pumpkin puree, and vanilla extract until well combined.
5. Gradually add dry ingredients to wet mixture and mix until just combined.
6. Fold in chocolate chips and mini marshmallows.
7. Scoop cookie dough onto prepared baking sheet, spacing about 2 inches apart.
8. Optional: sprinkle crushed graham crackers on top of each cookie.
9. Bake 12–15 minutes until edges are set and centers are soft.
10. Cool for 5 minutes on the sheet, then transfer to a wire rack to cool completely.
Notes
For extra gooey cookies, slightly underbake them.
Use dark chocolate or white chocolate chips for variation.
Store in an airtight container at room temperature for up to 3 days.
