Ingredients
4 slices of bread (thick-cut works best)
1/2 cup pumpkin puree
2 large eggs
1/4 cup milk (dairy or plant-based)
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 tsp vanilla extract
Pinch of salt
Butter or oil for cooking
Optional toppings: maple syrup, powdered sugar, whipped cream
Instructions
1. In a medium bowl, whisk together pumpkin puree, eggs, milk, cinnamon, nutmeg, ginger, vanilla, and salt.
2. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
3. Dip each bread slice into the pumpkin-egg mixture, coating both sides.
4. Place bread on the skillet and cook 2–3 minutes per side, until golden brown and cooked through.
5. Serve immediately with optional toppings such as maple syrup or powdered sugar.
Notes
Use sturdy bread like brioche or challah for best results.
Adjust spices to taste.
