A quick and creamy pumpkin Alfredo pasta, perfect for a cozy fall dinner. Silky pumpkin sauce tossed with pasta and seasoned with garlic, Parmesan, and herbs.
Ingredients
8 oz fettuccine or pasta of choice
1 cup pumpkin puree
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp unsalted butter
2 cloves garlic, minced
1/4 tsp nutmeg
Salt and pepper, to taste
Optional: chopped parsley or sage for garnish
Instructions
1. Cook pasta according to package instructions. Drain and set aside.
2. In a large skillet, melt butter over medium heat. Sauté garlic until fragrant, about 1 minute.
3. Add pumpkin puree, heavy cream, nutmeg, salt, and pepper. Stir to combine and heat through.
4. Add cooked pasta to the sauce and toss until fully coated.
5. Stir in grated Parmesan cheese until melted and creamy.
6. Serve immediately, garnished with chopped parsley or sage if desired.
Notes
Use canned pumpkin puree for convenience.
Adjust cream or Parmesan to reach desired sauce consistency.
Can be made vegetarian by using plant-based cream and cheese.
