Description
A flavorful one-pan shakshuka breakfast made with eggs poached in a spiced tomato and pepper sauce. Perfect for a hearty and wholesome brunch or breakfast.
Ingredients
2 tbsp olive oil
1 medium onion, finely chopped
1 red bell pepper, diced
2 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 tsp ground cumin
1 tsp paprika
1/2 tsp ground chili powder (optional for heat)
Salt and pepper to taste
4 large eggs
Fresh parsley or cilantro, chopped (for garnish)
Optional: feta cheese crumbles, warm bread or pita for serving
Instructions
1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers, cooking until softened (about 5 minutes).
2. Stir in garlic and cook for 1 minute until fragrant.
3. Add crushed tomatoes, cumin, paprika, chili powder, salt, and pepper. Stir well and simmer for 10–12 minutes until sauce thickens.
4. Make small wells in the sauce and crack the eggs into them.
5. Cover the pan and cook for 5–7 minutes, or until eggs are set to your liking.
6. Remove from heat, sprinkle with parsley or cilantro, and optionally add feta cheese.
7. Serve hot with crusty bread or pita for dipping.
Notes
For extra depth, add a pinch of smoked paprika or cayenne pepper.
If you prefer runny yolks, cook for less time after adding the eggs.
Shakshuka can also be topped with avocado slices or olives for variation.
