Description

Ingredients
1 whole chicken (3–4 lbs)
3 tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1 lemon, halved
Optional: fresh herbs for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. In a small bowl, mix olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper.
3. Pat the chicken dry and rub the herb mixture all over, including under the skin.
4. Place lemon halves inside the cavity of the chicken.
5. Place chicken breast-side up on a roasting pan.
6. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C).
7. Let chicken rest for 10 minutes before carving.
8. Garnish with fresh herbs if desired and serve.

Use a meat thermometer to ensure proper cooking.
