Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups mixed fresh vegetables (e.g., broccoli, bell peppers, zucchini)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add diced onion, sliced carrots, and sliced celery; sauté for about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the vegetable broth and add mixed vegetables; stir well.
- Add dried thyme and dried basil; stir again.
- Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Stir in the heavy cream, season with salt and pepper, and let simmer for an additional 5 minutes.
- Serve warm, garnished with fresh parsley.
Notes
Customize with your favorite vegetables or add protein for a heartier meal. For vegan option, replace heavy cream with coconut milk.
