- 8 oz pasta (penne or rotini)
- 12 oz smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat a large pot over medium heat. Add the sliced sausage and sauté for 5-7 minutes until browned. Remove and set aside.
- Add the diced onion and bell pepper to the pot, sauté for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and heavy cream. Add Cajun seasoning and bring to a gentle boil.
- Add the pasta, reduce heat to low, cover, and simmer for 10-12 minutes until al dente.
- Return the browned sausage to the pot. Mix well and season with salt and pepper.
- Garnish with chopped parsley before serving.
Notes
Best served warm. Pairs well with a side salad or garlic bread. You can add grated Parmesan for extra flavor.
