Ingredients

  • 2 cups orzo pasta
  • 4 chicken thighs or breasts
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large oven-safe pan over medium heat.
  3. Cook the minced garlic for about 1 minute until fragrant.
  4. Add the chicken thighs or breasts to the pan and season with salt and pepper.
  5. Brown the chicken for 5-7 minutes on both sides.
  6. Stir in the orzo pasta and pour in the chicken broth.
  7. Add the lemon juice and zest, stirring to combine.
  8. Simmer gently for 2-3 minutes on the stovetop.
  9. Transfer the pan to the oven and bake for 20-25 minutes.
  10. Remove from the oven, let it rest for a few minutes, and garnish with fresh parsley if desired.
