Ingredients

  • 1 lb chicken breast (diced)
  • 2 cups broccoli florets (fresh)
  • 2 cups mushrooms (sliced)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch
  • 2 tbsp water
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Cook the Rice: Start by cooking the rice according to the package instructions. Once cooked, set it aside.
  2. Cook the Chicken: Heat olive oil in a large skillet or wok over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown and fully cooked. Remove from pan and set aside.
  3. Sauté the Aromatics: In the same skillet, add sesame oil, onion, and garlic. Sauté for 1-2 minutes until fragrant.
  4. Add Vegetables: Toss in broccoli and mushrooms, cooking for 4-5 minutes until tender but crisp.
  5. Combine Chicken and Sauce: Return the cooked chicken to the pan, pour soy sauce over everything, and mix thoroughly.
  6. Thicken the Sauce: Create a slurry with cornstarch and water in a bowl, then add it to the skillet, stirring until the sauce thickens about 2 minutes.
  7. Serve: Serve hot over rice, garnished with sesame seeds or green onions if desired.

Cut chicken and vegetables uniformly for even cooking; do not overcrowd the pan when cooking; prep ingredients before cooking for a smoother experience.
