2 teaspoons vanilla extract (for frosting)

Instructions

1. Preheat oven to 350°F (175°C) and line two 12-cup muffin tins with cupcake liners.

2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Mix for 30 seconds.

3. Add eggs, buttermilk, vegetable oil, and vanilla extract to dry ingredients. Beat on medium speed for 2 minutes until well combined.

4. Reduce mixer speed to low and carefully pour in hot water. Mix for 30 seconds until fully incorporated (batter will be thin).

5. Divide batter evenly among cupcake liners, filling each about two-thirds full.

6. Bake for 18-22 minutes, rotating pans halfway through, until a toothpick inserted comes out with a few moist crumbs.

7. Remove from oven and cool in pans for 5 minutes, then transfer to a wire rack to cool completely (about 45 minutes).

8. While cupcakes cool, prepare buttercream: Beat softened butter on medium-high speed for 3 minutes until pale and fluffy.

9. Gradually add powdered sugar one cup at a time, beating well after each addition.

10. Add vanilla extract and 2 tablespoons cream, then beat on high speed for 3-4 minutes until light and airy.

11. Divide frosting into separate bowls and tint each with gel food coloring to create monster colors.

12. Transfer colored frosting into piping bags fitted with desired tips (star tip for fuzzy texture, round tip for smooth).

13. Pipe or spread frosting onto completely cooled cupcakes in your chosen design.

14. Decorate with candy eyes, mini chocolate chips, sprinkles, fondant pieces, and fruit leather to create monster faces and features.

15. Let decorated cupcakes sit for 30 minutes to allow frosting to set before serving.

Notes

Cupcakes can be baked 2 days ahead and stored unfrosted in an airtight container at room temperature.

For longer storage, freeze unfrosted cupcakes for up to 3 months wrapped individually in plastic wrap.
