Ingredients

  • 2 to 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it to prevent sticking.
  3. Mash the ripe bananas in a bowl until smooth.
  4. Add the melted butter to the mashed bananas and mix well.
  5. Combine the baking soda and salt into the mixture.
  6. Mix in the sugar, beaten egg, and vanilla extract until smooth.
  7. Incorporate the flour, stirring until just combined.
  8. Fill each muffin cup about two-thirds full with batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool in the tin for a few minutes, then transfer to a wire rack.
