- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 2 cups fresh spinach
- Juice of 1 lemon
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Prepare the Chicken: In a large pot or skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken breasts with salt and pepper on both sides.
- Cook the Chicken: Add the chicken to the pot and cook until it is browned and cooked through, about 5-7 minutes per side. Remove the chicken from the pot and set it aside.
- Sauté Garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add Orzo and Broth: Stir in 1 cup of orzo pasta and 4 cups of chicken broth, mixing well. Bring to a boil.
- Simmer: Reduce the heat and let the orzo simmer for about 10 minutes, stirring occasionally, until tender.
- Add Spinach: Stir in 2 cups of fresh spinach and cook for about 2 minutes, until wilted.
- Combine Chicken and Lemon: Return the cooked chicken to the pot and squeeze the juice of 1 lemon over the mixture, stirring until well combined.
- Serve: Serve warm, topped with freshly grated Parmesan cheese if desired.
