Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Prepare the Chicken: In a large pot or skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken: Add the chicken to the pot and cook until it is browned and cooked through, about 5-7 minutes per side. Remove the chicken from the pot and set it aside.
  3. Sauté Garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Add Orzo and Broth: Stir in 1 cup of orzo pasta and 4 cups of chicken broth, mixing well. Bring to a boil.
  5. Simmer: Reduce the heat and let the orzo simmer for about 10 minutes, stirring occasionally, until tender.
  6. Add Spinach: Stir in 2 cups of fresh spinach and cook for about 2 minutes, until wilted.
  7. Combine Chicken and Lemon: Return the cooked chicken to the pot and squeeze the juice of 1 lemon over the mixture, stirring until well combined.
  8. Serve: Serve warm, topped with freshly grated Parmesan cheese if desired.
