Description

Sweet and tangy Lemon Crumb Bars with a buttery crust and refreshing lemon filling, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine all-purpose flour, powdered sugar, and softened butter in a large mixing bowl.
  3. Mix until you get a crumbly texture for the crust.
  4. Grease an 8×8-inch baking pan with butter or non-stick spray.
  5. Press the crust mixture evenly into the bottom of the prepared baking pan.
  6. Bake the crust for about 15 minutes until light golden.
  7. Whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt for the filling.
  8. Pour the lemon mixture over the hot crust.
  9. Bake again for an additional 20-25 minutes until set with a slight jiggle in the center.
  10. Cool completely in the pan before cutting into squares.
  11. Dust with powdered sugar before serving.
