Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour and powdered sugar in a mixing bowl. Cut in the softened unsalted butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of a greased 9×9-inch baking dish.
  4. Bake the crust for about 15 minutes or until lightly golden.
  5. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth while the crust is baking.
  6. Pour the lemon mixture over the hot crust and spread evenly.
  7. Bake for an additional 20 minutes until the filling is set.
  8. Let cool in the dish, then dust with powdered sugar and cut into squares.
