Instructions
- Preheat your oven to 350°F (175°C).
- Combine the all-purpose flour and powdered sugar in a mixing bowl. Cut in the softened unsalted butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of a greased 9×9-inch baking dish.
- Bake the crust for about 15 minutes or until lightly golden.
- Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth while the crust is baking.
- Pour the lemon mixture over the hot crust and spread evenly.
- Bake for an additional 20 minutes until the filling is set.
- Let cool in the dish, then dust with powdered sugar and cut into squares.
