- 1 1/2 cups cold heavy whipping cream
- 6 tablespoons confectioners’ sugar
- 1/2 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C).
- Mix the graham cracker crumbs, granulated sugar, and kosher salt in a medium bowl. Pour in the melted butter and stir until the mixture is moistened.
- Press the mixture firmly into a 9-inch pie plate to form the crust. Bake for 8 to 10 minutes, then allow it to cool completely.
- Whisk together the sweetened condensed milk, Key lime zest, Key lime juice, egg yolks, and vanilla extract until smooth and creamy in a large bowl.
- Pour the filling into the cooled crust and spread it evenly. Bake for 10 to 12 minutes until the filling is set but slightly jiggly in the center.
- Let the pie cool at room temperature for about 30 minutes. After that, chill it in the refrigerator for at least 120 minutes to let the flavors meld together.
- Beat the cold heavy whipping cream on medium speed. Gradually add the confectioners’ sugar and vanilla extract until soft peaks form.
- Spread the whipped cream over the cooled pie and garnish it with Key lime slices for a beautiful presentation.
Notes
Use fresh Key limes for the best flavor. Ensure egg yolks are at room temperature for better emulsification.
