  • 2 tablespoons granulated sugar
  • 1/2 teaspoon kosher salt
  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups sweetened condensed milk
  • 1 1/2 tablespoons Key lime zest
  • 1/2 cup fresh Key lime juice
  • 4 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups cold heavy whipping cream
  • 6 tablespoons confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • Garnish: Key lime slices

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the graham cracker crumbs, granulated sugar, and kosher salt in a medium bowl. Pour in the melted butter and stir until the mixture is moistened.
  3. Press the mixture firmly into a 9-inch pie plate to form the crust. Bake for 8 to 10 minutes, then allow it to cool completely.
  4. Whisk together the sweetened condensed milk, Key lime zest, Key lime juice, egg yolks, and vanilla extract until smooth and creamy in a large bowl.
  5. Pour the filling into the cooled crust and spread it evenly. Bake for 10 to 12 minutes until the filling is set but slightly jiggly in the center.
  6. Let the pie cool at room temperature for about 30 minutes. After that, chill it in the refrigerator for at least 120 minutes to let the flavors meld together.
  7. Beat the cold heavy whipping cream on medium speed. Gradually add the confectioners’ sugar and vanilla extract until soft peaks form.
  8. Spread the whipped cream over the cooled pie and garnish it with Key lime slices for a beautiful presentation.

Notes

Use fresh Key limes for the best flavor. Ensure egg yolks are at room temperature for better emulsification.
