Ingredients

  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Fresh strawberries, sliced
  • 1/2 cup sugar (for macerating strawberries)
  • Chocolate ganache (for shell topping)
  • Whipped cream (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and beat on medium speed for about 2 minutes.
  4. Incorporate the boiling water carefully into the batter.
  5. Bake in the preheated oven for 30-35 minutes until a toothpick comes out clean.
  6. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Macerate strawberries by mixing them with 1/2 cup sugar and letting them sit for 30 minutes.
  8. Assemble the cake by layering one cake onto a serving plate, spreading macerated strawberries, and adding the second layer on top.
  9. Add chocolate ganache over the top of the cake.
  10. Serve with whipped cream if desired.
