Description

Authentic Huevos Rancheros – a classic Mexican breakfast with fried eggs, warm tortillas, refried beans, and fresh salsa ranchera. Hearty, flavorful, and ready in 30 minutes!


Ingredients

4 corn tortillas

4 large eggs

1 cup refried beans (pinto or black beans)

1 tbsp olive oil

1 cup salsa ranchera (homemade or store-bought)

1/2 avocado, sliced

1/4 cup queso fresco or cheddar (optional)

2 tbsp fresh cilantro, chopped

Salt and pepper, to taste

Lime wedges, for serving


Instructions

1. Warm tortillas in a skillet until slightly crispy.

2. Heat beans and spread over each tortilla.

3. Fry eggs sunny-side up in olive oil, season with salt and pepper.

4. Top tortillas with beans, then eggs.

5. Spoon warm salsa ranchera over eggs.

6. Garnish with avocado slices, cheese, cilantro, and lime wedges.

7. Serve hot and enjoy!

Notes

For spicier Huevos Rancheros, add extra jalapeños to the salsa.

Use whole-wheat tortillas for a healthier version.

Cook eggs to your preference – sunny-side up or over-easy.
